Yesterday I was lucky enough (in many ways) to be sitting on the floor in Ethan’s bedroom when he decided to take a closer look at the bars of his crib.

It started off with innocent fun. Ethan would stare at me and laugh as I crawled around on the floor below the crib. Then, he realized that the bars were lower on the front of the crib…

That realization led to Ethan discovering that he could actually reach the top of his bars and pull himself up.

It’s safe to say that at this point I was yelling for Lauren to come upstairs so that she could see this fun milestone, and she made it upstairs just in time…


Thank You

It seems only fitting that I should take a few seconds on Thanksgiving to reflect on 2009 and write about what I am thankful for. In years past it may have been more challenging but 2009 was simplified when my wife and I were blessed by the arrival of our son. The birth of Ethan has unlocked emotions I did not know existed within, strengthened the love and faith I have in Lauren, and has matured my outlook on life. I am truly thankful to have witnessed Ethan’s amazing development and shared those memories with Lauren. The past 7 months have passed so quickly and have easily been the happiest times of my life.

In addition to Ethan’s presence, I am also thankful for my family, a new nephew, having a job, making new friends, getting closer with old friends, and being in good health to enjoy it all.

So, as I sit here on the couch as the day slowly comes to an end, I want to say thank you to all of you who have made me feel so loved.

Thanksgiving Contributions: Bleu Cheese & Bacon Mashup Potatoes

So, the last piece of cooking that I had to do was to make one more set of mashed potatoes, these with bleu cheese and bacon. To be honest, I’m not quite as excited about these as I was the horseradish potatoes as I apparently do not like bleu cheese as much as my stomach thought I did when I made them. But, if you like bleu cheese, you’ll love these:

Ingredients:

  • 5 redskin potatoes
  • 1 onion
  • 5 slices of applewood smoked bacon
  • 2 tablespoons of butter
  • 1/2 cup of milk
  • Salt & pepper to taste

Directions:
Boil the potatoes until soft. Slice the bacon up into small pieces and cook up in a frying pan. Once crisp, remove the bacon and let it sit on a paper towel to soak up the grease. Slice the onion and drop into pan to crisp in the grease. As with the bacon, once crisp, scoop out and place on a paper towel to collect the grease. Meanwhile, melt your butter and add your milk to a nice little mixture. When potatoes are finished, drop them and the butter mixture in the mixer, and combine. Once well-mixed, add the bacon and onions, and any salt and pepper to taste.

Coffee Break

We took a little break from the cooking to walk down to St. Elmo’s Coffee Pub and grab a coffee and take in the annual Del Ray Turkey Trot. While there we introduced Ethan to the concept of a straw. I’m not sure if he is cringing from the taste of the orange juice or the feel of the straw but it certainly didn’t deter him from stealing the straw multiple times.

Thanksgiving Contributions: Horseradish Mashup Potatoes

Now that the squash casserole has been mixed and is ready to be thrown into the oven when we get down to my parent’s house, I’m on to the different forms of mashed potatoes I’m bringing down to my parent’s house. Because I’m kind of winging the potatoes and they will consist of many different ingredients, combined with the web 2.0 nature of the post I’ll call them mashup potatoes.

First up, the horseradish variety. And I’ll try to capture the ingredients as best as I can, but a lot of this will be done by guess and taste.

Ingredients:

  • 1 baking potato
  • 2 sweet potatoes
  • 1 sweet onion
  • 2 tablespoons of butter
  • 1 diced clove of garlic
  • 3 tablespoons of prepared horseradish
  • salt & pepper to taste

Directions:
Boil the potatoes and onion together until soft. You can peel the potatoes or leave the skin on, it’s entirely up to you. In this case, I peeled the baking potato and one of the sweet potatoes (forgot to do the other) before throwing them into the pot. Meanwhile, go ahead and melt the butter, and mix it with the garlic and horseradish to be mixed in when done. Once the potatoes are soft, drop them into the mixer and pour your mixture on top of them, adding your salt and pepper. Mix together until well blended, and poof, done. You can then throw them into the oven for 20 minutes to heat up before serving.

Next up: applewood smoked bacon and bleu cheese mashed potatoes.

But first, the family and I are heading to the coffeeshop to watch the Del Ray Turkey Trot.

Thanksgiving Contributions: Squash Casserole

A few years ago, my dad began to ask each of us to start contributing to the Thanksgiving meal preparation to cut down on the amount of cooking he was responsible for. Frankly, I am surprised it took him that long to ask as he had been putting together a delicious meal for the four of us (sometimes more) for the past 26 years. And as a single, unknowledgeable in the art of cooking dude, I did what anyone from my generation would do, I Googled for ideas of what to bring.

I’m not quite sure how I landed on squash casserole, or even this recipe, but it quickly became a favorite and is now something that I can bring in a pinch when contributions to Thanksgiving (or any pot luck for that matter) are required. Thank you Kim for submitting such an excellent recipe.

I think also it was making this casserole that really uncovered my knack and enjoyment for cooking.

Ingredients:

  • 2 1/2 to 3 pounds of squash, sliced
  • 1 large yellow onion, diced
  • 1 stack of saltines, crushed
  • 3 tablespoons butter, melted
  • 1 egg, beaten
  • 1 cup milk
  • salt and pepper to taste
  • 1 to 2 cups shredded cheese(reserve 1/2 cup cheese)

Preparation:

Cook squash and onion in water until tender; drain and mash. Add crushed saltines, melted butter, beaten egg, milk, salt and pepper, and 1/2 to 1 1/2 cups shredded cheese; mix to blend well.Pour into a greased casserole dish. Bake in 400° oven about 45 minutes or until golden brown and set in middle. Remove from oven and sprinkle with reserved 1/2 cup cheese.

Here is a shot of the squash and onions boiling… and yes, it’s truly 7:10am – what else are you going to do when you’ve been up for 2 hours thanks to a son who is really congested and can’t sleep?

Ripping Paper

Today, a scheduling snafu forced me to stay home and take care of Ethan while my better half went to work. Which was fine considering that I’m still hacking up a lung and we thought E might have an ear infection. So, our day together consisted of a trip to the pediatrician’s office (where we waited for 50 minutes), a haircut (mine, not Ethan’s), a trip to Shoppers, a latte from the Bucks, and chores around the house. E decided that today would be a good day to boycott the afternoon nap so he entertained himself while I did my Mr. Mom duties of vacuuming and laundry.

Anyway, my favorite moment of the day was learning that Ethan loves to play with the paper on the doctor’s table. He ripped through a good 10 feet of it while we waited for someone to remember we were there. This was the only picture I could capture where he isn’t blurry from all of the ripping.

Heck he could be easy to shop for this Christmas…

Win Some, Lose Some

Tonight’s Monday Night Football game wraps up a week where I will have evenly split both my fantasy teams and “real life” football teams. The highlight of the weekend was Penn State’s thrashing of Michigan State up in East Lansing, the lowlight was the Redskins’ inability to score more than 6 points down in Dallas. In both cases, I was left frustrated.

In the case of Penn State, it was yet another game where Penn State’s offense chose to show up for one half of football, and left us fans shaking our heads about what could have been this season. Yes, we finished 10-2, but as my brother was very quick to point out (thanks Steve), what big wins did Penn State really have this season? The only two big games they had (at home I might add), they lost. And not just any loss, they collapsed. Where was this offense during those games? Where was that offensive line?

In the case of the Redskins, one week after showing signs of having an offense last week against Denver, they returned to their no-scoring ways down in Dallas, losing 7-6. You could not have asked the defense to play any better than they did, holding Dallas scoreless for most of the game. My biggest beef though from the game was the blatant bias that Troy Aikman showed in announcing the game with Joe Buck. When Troy told us viewers that Dallas was going to score at any moment because that’s the kind of team they are, I did NOT appreciate that little bit of “insight” he was providing. Anyway, I look forward to yet another week of second guessing and disappointed fans.

On the fantasy front, I’m about to pull of my 5th straight win in a league I started 0-6, a mere win away from making the playoffs, and am about to lose in the other league that will put me one loss away from missing the playoffs.

And Knowing is Half the Battle…

After sitting on our GI Joe netflix for over 3 weeks now I was finally able to talk my wife into watching it last night. As someone who grew up playing with the action figures with my brother, watching the cartoon after school, and reading whatever comics my brother would allow me to read (as long as I didn’t crease them or break the spine), I thorougly enjoyed the movie. Where Transformers incorporated a little too much cheese factor and gratuitous sex appeal with Megan Fox, GI Joe kept it strictly business with the Joes chasing after Cobra for most of the movie. The special effects were pretty cool (a little too cool at times), but if you are into non-stop action and grew up with GI Joe, you will enjoy the movie tremendously. And yes, I admit that I narrated who the characters were, along with their backstory throughout the movie for the benefit of my in-laws.

Which got me thinking about the original GI Joe PSAs… Not only were the cartoons fun to watch, you learned something along the way.
